Item # LFA132 Hard to find French terra cotta tripière. Circa 1890's. Beautiful brown and cream salt glazed clay pot. Aged, crackled patina. Retains heat well and guarantees even heat distribution throughout the vessel. Factory stamp on bottom. Wonderful, authentic Provincial piece for your kitchen or dining room when not in use. A heavy, glazed earthenware pot dating back to the middle ages, the tripière resembles a flattened bean pot. Originally designed to slow-cook tripe to melting perfection, the tripière can be used to gently cook other meats. Tripière come in various sizes, from individual eight ounce to three gallon vessels which can hold over eight pounds of tripe. The narrow mouth helps keep the moisture from evaporating and escaping from the vessel during cooking. It also facilitates the sealing of the pot with flour paste to create a hermetic seal necessary for the proper preparation of tripes à la mode de Caen. In the old days, the dish would be assembled in the tripière at home and taken to the communal boulangerie to be left in all day as the oven cooled after the morning's bread baking.
