Vintage, Country French pâté terrine. Circa 1950's. Typical French golden brown and cream glazed terra cotta terrine with lid. Decorative and charming, as well as functional. Mark on bottom LA BOURGUIGNONNE MADE IN FRANCE. Brittany, France.
Pâtés, literally "pastes," are prepared from meat, usually liver, and fat, which can be coarsely or finely ground. They differ from rillettes by being cooked in the oven in the terrine, which is usually set in a baine marie (mary's bath) filled with water to make the cooking process more gentle. Pâtés can also be cooked pâté en croute (in a pastry case) much the same shape as a terrine.
