Le Paludier de Guérande Fleur de Sel is a delicate sea salt harvested by hand from the salt marshes of Le Paludier, located in the small seaside town of Batz sur Mer, part of the Guérande Peninsula. Very rare and of outstanding quality, this artisan salt is harvested by paludiers (the salt harvesters of the Guérande region) using only wooden tools to scrape the top layer of salt, preserving its pure taste. Once collected, the salt is simply left to drain and bake naturally in the sun. The weather conditions must be perfect to produce a good Fleur de Sel harvest, and the process can only be completed once a year, in the summer.
Known as the caviar of salts, this traditional French delicacy is acclaimed by many chefs as the best of all sea salts. Just as the cream rises to the top, so does the best Fleur de Sel. Used as a "finishing" salt rather than for cooking, the special flavor and texture of Fleur de Sel enhances any dish. Certified organic and additive free, it is large in grain and the moistest of the salts.
